Learn how to make unicorn cookies that are PERFECT for a fun holiday treat. Simple, easy, and delicious! The perfect Christmas cookie recipe!

WHERE CAN I FIND A UNICORN COOKIE CUTTER?
You have to get the cookie cutter to make the unicorn shape! (I mean – you can totally try it free-handed but it was way out of my comfort zone!)
The best places to find a cookie-cutter shaped like a unicorn are on Amazon or even at your local craft store. You’re probably going to have different sizes available. Just choose what you want and just know that this recipe might make more or fewer cookies based upon the size.
I got this set because it came with nine different unicorn-shaped cookie cutters and I knew I would use the other styles for other projects.

INGREDIENTS
This Unicorn Cookie Recipe is so much fun to make and even more fun to decorate!
- Cookies
- coconut oil, room temperature
- eggs
- sugar
- vanilla extract, clear
- baking powder
- flour
- Icing
- powdered sugar
- egg whites
- vanilla extract
- red gel food coloring
- black food marker
- green gel food coloring
- star sprinkles
- gold edible glitter
HOW TO MAKE UNICORN CHRISTMAS COOKIES
These unicorn cookies are so easy to make and being able to decorate cookies for Christmas is such a fun family bonding activity.

STEP ONE: MIX INGREDIENTS
Preheat your oven to 350 degrees. Cream the sugar and coconut oil then add egg and vanilla extract, mixing until combined. Set aside.
Sift together the flour and baking powder into a second bowl.
Add the dry ingredients to the wet ingredients in 1/3 increments, stirring between each increment.
The dough will be crumbly, but it’s supposed to be for sugar cookies!
STEP TWO: ROLL OUT THE DOUGH
Turn out the dough onto a sheet of parchment paper. You do not need to dust the parchment paper with flour as the dough should not stick to it.
Roll the dough flat to approximately 1/4-inch thick.
With a unicorn cookie cutter, cut out your cookies.
Remove the excess cookie dough from around the cookies.
Do not try to move the cookies individually, but transfer the whole parchment paper sheet to the cookie sheet. This helps the cookies keep their shape and saves you time!

STEP THREE: BAKE THE UNICORN COOKIES
Bake the unicorn cookies for 10 minutes. Transfer the parchment paper to a wire rack and allow the cookies to cool completely.
Remember you can’t frost a warm or hot cookie or the frosting will melt and make a mess.
STEP FOUR: DECORATE THE COOKIES
To make the icing, combine the icing ingredients in a small bowl and beat until smooth.
Place 1/3 of the icing in a second bowl.
Split this smaller portion of icing in half in two bowls.
With one small bowl of icing, add 8 or so drops of red food coloring and stir.
With the other bowl of icing, add 6 or so drops of green food coloring and stir.
Using the white icing, pipe a small line around the edge of the cookie, then immediately filling it in completely.

Let this layer of icing crust over and dry for 2-3 hours.
With the red icing, add small strips of mane. Allow this layer of icing to crust over for 30 minutes.

With the green icing, fill in any remaining strips of mane.
Place a star sprinkle on the green section of mane close behind the horn.
Mix the vanilla extract with the edible glitter and paint each horn.
With the black edible marker, draw in a nostril and closed eye.

Allow the marker, icing and glitter to dry for 2-3 hours.

- 1/2 cup aquafaba (or 2 egg whites)
- 1/2 tspn vanilla extract
- Red gel food coloring
- Black food marker
- Green gel food coloring
- Star Sprinkles
- Gold Edible Glitter
- ⅛ tsp Vanilla extract to mix with edible glitter
