Easy Sweet Potato Biscuits

With just 6 simple ingredients, these Sweet Potato Biscuits are the perfect holiday side dish. Loaded with flavor and delicious to eat warm topped with a tiny bit of butter.

HOW DO YOU COOK A SWEET POTATO IN THE MICROWAVE?

Since this recipe has one sweet potato in it, you can cook it quickly in the microwave to perfection before adding it in. Wash the outside of the sweet potato really well and then prick holes in it using a fork.

Wrap it in a paper towel and place it in the microwave. The time that you need to cook it will depend on the size but a good start is to cook it for 3 minutes, then flip it over and cook it for another 3 minutes. (careful – it will be hot!) You’ll know that it’s done when you can put a fork into it and it’s tender and soft.

INGREDIENTS

All you need to do to make these homemade sweet potato biscuits is gather up the simple ingredients listed below. There is nothing better than a homemade biscuit that has butter melted on it!

  • Sweet potato
  • Milk
  • All-purpose flour
  • Sugar
  • Baking powder
  • Salt
  • Unsalted butter

HOW TO MAKE EASY SWEET POTATO BISCUITS

Once you whip up these simple, but delicious sweet potato biscuits, they just might become a staple side dish for all your holiday meals. In fact, you may want to eat them year round!

Step One: Preheat the oven

Preheat the oven to 425 degrees and line a baking sheet with parchment paper to prevent sticking.

Step Two: Cook the potatoes

Cook the sweet potatoes in the microwave. Clean the outer layer then prick with a form all over. Wrap in a paper towel and place in a bowl that is microwave-safe for about 5 minutes or so. You may need to do more time depending on the size. Once the potato has cooked and cooled, peel the skin and mash with a fork.

Step Three: Add the milk

Pour 1/3 cup of milk with the mashed sweet potato and stir.

Step Four: Mix the dry ingredients

Put the flour, sugar, baking powder, and salt into a food processer and pulse. Add in the butter and pulse. The mixture will look very coarse. Add in the potato and milk mixture and pulse to combine. (Don’t overmix, just pulse until combined)

Step Five: Add more milk

Add the rest of the milk a tiny bit at a time until the mixture is moist and starts to stick together.

Step Six: Turn out the dough

Put some flour on the counter and put the dough on top. Fold it 2-3 times and pat the dough until it’s about 1/2 inch in thickness.

Step Seven: Cut the dough into biscuits

Use a biscuit cutter and cut the dough into 2-2 1/2 inches in size.

Step Eight: Bake the biscuits

Put the biscuits on a baking sheet and bake in the oven for 12-14 minutes.

HOW DO I KNOW WHEN BISCUITS ARE DONE BAKING IN THE OVEN?

When biscuits are done baking, the tops and edges are going to be golden-brown. This is your biggest clue that they’re ready to be pulled from the oven to start the cooling process.
