STEP ONE: DIP COOKIES
The first step is to line a baking sheet with parchment paper or waxed paper.
Now melt the blue candy melts in a small bowl according to package directions. Remember not to overheat the candy or it may seize. You can add 1 teaspoon of vegetable shortening or coconut oil to the bowl to make the blue candy melts pourable.
Once the blue candy is melted dip the Nutter Butter cookies about 3/4 of the way into the melted candy.
Let the excess candy drip back into the bowl then lay the cookies on the covered baking sheet.
Allow the cookies to totally set up.
STEP TWO: DRIZZLE
While the cookies are setting up go ahead and put the remaining melted blue candy into a piping bag and just snip the end off.
Drizzle some blue candy over the dipped end of the cookies like in the picture.
STEP THREE: MAKE EYES
Now it is time to make the eyes on the baby Jesus.
Melt a few of the chocolate candy melts according to the package directions. It doesn’t take much to make these tiny eyes!
Use a toothpick and dip it into the melted brown chocolate.
Draw 2 half circles with the chocolate on the uncoated portion of the cookies to be the eyes of the baby.
STEP FOUR: DECORATE CUPCAKES
Now pour the yellow jimmies into a shallow bowl.
Put the yellow frosting into a piping bag and put the large open star tip on the bag.
Pipe the yellow frosting onto each cupcake.
Invert the cupcakes and dip them into the bowl of yellow jimmies.
Add one baby Jesus cookie to the top of each cupcake.
