Easy Christmas Salad with Homemade Dressing

For the Dressing
- ¼ cup of Balsamic Vinegar
- ¼ cup of Extra Virgin Olive Oil
- 1 tablespoon of Honey
- 2 teaspoons of Dijon Mustard
- 1 fat clove of Garlic grated
- ½ teaspoon of Dried Thyme
- ½ teaspoon of Dried Rosemary
For the Salad
- 1 10 oz. box of Baby Spring Mix
- 1 Honeycrisp or Gala Apple sliced
- 1 Granny Smith Apple sliced
- ¼ cup of toasted Pistachio
- ¼ cup of toasted Almond Slivers
- ¼ cup of dried Cranberries
- 2 tablespoons of crumbled Feta Cheese
Dressing
Add the ingredients for the dressing to a small bowl.
Using immersion/stick blender, blend it into a thick and creamy dressing. You can whisk it with a wire whisk too, but using a blender results in a creamy emulsified dressing. You can also use a regular blender or a mini food processor.
Salad
In a large bowl, combine the salad greens and the sliced apples.
Add about ¾ of the dressing and toss the salad.
Arrange the salad on a serving plate.
Add the pistachio, almonds, and cranberries on top of the salad.
Drizzle the remaining salad dressing and top with crumbled feta cheese.
