Easy Christmas Salad with Homemade Dressing

Ingredients

For the Dressing

  • ¼ cup of Balsamic Vinegar
  • ¼ cup of Extra Virgin Olive Oil
  • 1 tablespoon of Honey
  • 2 teaspoons of Dijon Mustard
  • 1 fat clove of Garlic grated
  • ½ teaspoon of Dried Thyme
  • ½ teaspoon of Dried Rosemary

For the Salad

  • 1 10 oz. box of Baby Spring Mix
  • 1 Honeycrisp or Gala Apple sliced
  • 1 Granny Smith Apple sliced
  • ¼ cup of toasted Pistachio
  • ¼ cup of toasted Almond Slivers
  • ¼ cup of dried Cranberries
  • 2 tablespoons of crumbled Feta Cheese

Instructions

Dressing

  • Add the ingredients for the dressing to a small bowl. 
  • Using immersion/stick blender, blend it into a thick and creamy dressing. You can whisk it with a wire whisk too, but using a blender results in a creamy emulsified dressing. You can also use a regular blender or a mini food processor.

Salad

  • In a large bowl, combine the salad greens and the sliced apples.
  • Add about ¾ of the dressing and toss the salad.
  • Arrange the salad on a serving plate. 
  • Add the pistachio, almonds, and cranberries on top of the salad.
  • Drizzle the remaining salad dressing and top with crumbled feta cheese.
