Preheat your oven to 350 degrees. Cream the sugar and coconut oil then add aquafaba (or eggs–again, I was just out of them) and vanilla extract, mixing until combined. Set aside.
Sift together flour and baking powder into a second bowl.
Add dry ingredients to the wet ingredients in 1/3 increments, stirring between each increment. The dough will be crumbly, but it’s supposed to be.
Turn out the dough onto a sheet of parchment paper. You do not need to dust the parchment paper with flour as the dough will not stick to it.
Roll the dough flat to approximately 1/4-inch thick.
With a unicorn cookie cutter, cut out your cookies.
Remove the excess cookie dough from around the cookies.
Do not try to move the cookies individually, but transfer the whole parchment paper sheet to the cookie sheet.
Bake your cookies for 10 minutes. Transfer the parchment paper to a wire rack and allow the cookies to cool completely.
To make the icing, combine the icing ingredients in a small bowl and beat until smooth.
Place 1/3 of the icing in a second bowl.
Split this smaller portion of icing in half in two bowls.
With one small bowl of icing, add 8 or so drops of red food coloring and stir.
With the other bowl of icing, add 6 or so drops of green food coloring and stir.
Using the white icing, pipe a small line around the edge of the cookie, then immediately filling it in completely.
Let this layer of icing crust over and dry for 2-3 hours.
With the red icing, add small strips of mane. Allow this layer of icing to crust over for 30 minutes.
With the green icing, fill in any remaining strips of mane.
Place a star sprinkle on the green section of mane close behind the horn.
Mix the vanilla extract with the edible glitter and paint each horn.
With the black edible marker, draw in a nostril and closed eye.
Allow the marker, icing and glitter to dry for 2-3 hours.
