Easy Make Ahead Mashed Potatoes in the Oven

These easy make ahead mashed potatoes will save you time when you are busy cooking that big holiday meal!

Ingredients

  • 3 lb. Golden Potatoes peeled and cut into chunks (russet potatoes works fine too)
  • 4 oz. Cream Cheese softened, ½ block
  • 4 tablespoons softened Butter
  • 1 cup Sour Cream
  • ½ cup Half and Half or Whole Milk
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • Chopped Chives if desired

Instructions

  • Boil the peeled potatoes till they are fork-tender.
  • Mash them with a potato masher till almost lump-free.
  • Add the softened cream cheese, butter, sour cream, garlic and onion powder, salt, and pepper and whisk it until smooth
  • Add the milk and whisk it in.
  • Pour the mashed potatoes into a 9x13 baking dish. Cover tightly and refrigerate till ready to serve.
  • Preheat the oven to 350.
  • Bake the mashed potatoes covered for 30 minutes.
  • Remove the foil cover and bake for another 10 minutes to crisp up the top.
  • Garnish with finely chopped chives if desired and serve immediately.

Notes

The top of the mashed potatoes will be crispy, but under that slightly golden top, will be perfectly fluffy mashed potatoes.
